Quality Assurance Tech



Job Summary:

Perform various functions and special assignments to assist the quality assurance department in the administration of department functions for the protection and production of high quality and food safe products.


Essential Functions:

  • Maintains Audit documentation pertaining to QA
  • Assists QA manager in co-packing relationships including COA's, and other requests
  • Manages assigned program manuals (including updating documentation, conducting training, and quarterly audits)
  • Monitors and verifies HACCP activities
  • Assists QA manager with mock recoveries as required by HACCP
  • Ensures that all aspects of operation meet all GMP'S, Personal and Food Safety Rules
  • Conducts and documents daily audits/quality checks of the production area
  • Recommends to QA manager and Plant Manager; product holds if contaminants are discovered
  • Assists in the investigation of and follow thru in the customer Complaint process
  • Conducts in-house facility inspections
  • Participates in all 3rd party audits including AIB, Regulatory, Customer, etc.
  • Assists in maintaining supplier documentation, ingredient specifications and acquiring necessary paperwork for test ingredients
  • Analyzes, monitor and report deviations regarding production process controls including Production Data
  • Generates Weekly SPC reports using Matrix; distribute to the bun company management team
  • Prepares reports and maintain records and documentation according to guidelines
  • Assists with sample picking as requested
  • Assist in the training of personnel on the requirements of HACCP, GMP, SPC, Analytical Methods and all other pertinent programs
  • Food Analysis
    • pH & TTA (monthly tracking of sponge and dough cycles)
    • Calibration of the pH meter on a daily basis
    • Perform pH And TTA's as requested
    • Thermometer maintenance & calibration (Lab And Facility)
    • Order replacement units and calibrate
    • In accordance with the calibration program; verify all thermometers with the frequency stated in the program.
    • Moisture Analysis as required / requested
    • Scale calibration (Lab And Facility)
    • In accordance with the calibration program; verify all scales with the frequency stated in the program.
    • Water Pathogen Testing (Microtox); order necessary supplies for water testing unit and maintain equipment for proper function in conjunction with the supplier.
    • Assist QA manager in setting up and maintaining a calibration program.
  • Monitors production, raw materials and finished product for sanitation or quality deviations and reports to Quality Manager.
  • Develops, implements, monitors, updates and trains, as needed, a raw ingredient testing and retention program including water testing and verification of Certificates of Analysis.
  • Working with the QA manager; develops, implements, monitors, updates and trains, as needed, an Equipment Calibration Program.
  • Working with the QA manager; develops, implements, monitors, updates, and trains, as needed, an Environmental Testing Program.
  • Participates in research / development projects as requested.
  • Stays current with food related consumer trends, Allergens and Sensitive ingredients, GMO' and other related topics through Continuing Education such as workshops, seminars and publications.
  • Bi-monthly summaries regarding the status of work-related activities to be submitted to the QA manager.
  • Other duties may be assigned as business necessitates.


Skills and Qualifications:

Education and Experience:

  • Must have a minimum of one-year quality assurance experience or internship/research experience in a food-manufacturing environment.


Knowledge, Skills and Abilities:

  • Must possess good verbal and written communication skills and be a self-starter, capable of working independently.
  • Must be willing to work weekends and overtime hours.


Physical Demands:

  • Able to stand, stop, bend, and crouch on a regular basis.
  • Able to work in temperatures from 90 to 110 and in humidity levels as high as 98%.
