Machine Operator

(Pastry, Cinnamon Roll & Croissant Bakery)



The Bakery Cos. is one of the most exciting employment opportunities headquartered in Nashville! We are comprised of several high-speed industrial bakeries located in Tennessee, Georgia and South Dakota.  The Bakery Cos. manufactures assorted bread products for national and global brands such as McDonald's (ever had an Egg McMuffin?), Pepperidge Farm, Whole Foods, Wal-Mart, and Five Guys (yep, we make their buns).  The Bakery Cos. was established more than 20 years ago.  We take pride in living out our mission every day by Creating Opportunities, Making a Difference, and Impacting Lives.



Accountable for operating bakery-pastry machinery and its associated down-stream equipment.  Will monitor and control the continuous flow of product thru the production process; from mixing ingredients to oven baking to product packaging.  Will adjust control panel settings as needed.  Collaborates with the team members, maintenance and supervisor to maintain a safe work environment and adhering to Bakery cos. GMPs and established procedures.



  • Operate assigned machinery in a safe and efficient manner.
  • Equipment may include Oven systems, Mixer & blender equipment, Frosting Coating machine, Bagging Machines, pan washing machines.
  • Maintains and adjusts freezer-retard temperature and sets timer to required setting.
  • Monitors the process to ensure continues bakery product process flow through conveyor systems.
  • Will operate various PLC panels to control proper flow of product.
  • Troubleshoots process and makes speed adjustments.
  • Document weight, product yield, downtime and additional metrics.
  • Collaborates with the in-line Product Laminator and Mixer to ensure continues product flow.
  • Adjusts Ensuring product standards, specifications, and customer requirements are met.



  • Follow all GMP's, Food Defense and quality policies
  • Ensures all GMP and all food hygiene and safety standards are in compliance
  • Report all food safety incidents such as GMP violations, ingredient and product contamination, metal detector, screen or magnet deviancies', glass breakage, and pest harborage.



  • Must be flexible with schedule, including start times and weekend work.
  • Willing to acquire a wide variety of skills to assist the surrounding team and fully understand the processes.
  • Able to problem solve, learn on the fly, process and technical learning, and quality decision.
  • Must be able to work in a team environment as well as work independently.



  • Must be able to lift up to 50 pounds.
  • Reach above shoulder height.
  • Able to bend, twist, stand, climb stairs/ladders, push/pull, and walk for the length of shift.



  • Work in a noisy environment.
  • Work in an enclosed indoors area.
  • Work in wet and/or humid conditions.
  • Work in cold or hot environments.
